
Marbled cottage cheese casserole with pumpkin
Description
The bake comes together easily and quickly. When choosing ingredients for the casserole, go for ripe, sweet pumpkin. The farmer’s cheese should not be overly wet. If it is wet, spoon it onto cheesecloth and press with a weight. Once the whey has drained off, use the cheese as directed. You can adjust how sweet the casserole is to suit your taste. Raisins can be swapped for dried cranberries or cherries.

Prepare the necessary ingredients.

Peel the pumpkin and remove the skin. Cut it into small pieces. Cut or slice 40 g of butter into a roomy baking dish. Add the prepared pumpkin to the dish. Bake at 180°C for 40–50 minutes, until tender.

Transfer the cooked pumpkin to a bowl, add 3 tbsp sugar, 1½ tbsp semolina, and vanillin to taste. Blend with an immersion blender until smooth and uniform.

Add the egg and stir with a spoon.

In a separate bowl, mix 30 grams of soft butter, 1½ tablespoons semolina, 3 tablespoons sugar, cottage cheese, vanilla, and raisins. Mix well. If you like, purée with a blender.

When the mould is filled, take a wooden skewer. Run it across the casserole several times.

Level the surface of the casserole. Bake in an oven preheated to 170°C for 50–60 minutes.

You can serve the cottage cheese casserole with pumpkin either warm or fully chilled. When the casserole has cooled completely, the sliced pieces show an attractive marbled pattern.
