
Marbled Turkey
Description
This appetizer is quick and easy to prepare. For this recipe, a large turkey breast fillet works well. It must be thoroughly patted dry so the pattern spreads more evenly. If you do not have a special tubular bandage, use a pharmacy tubular mesh bandage, size No. 2. Note that this recipe requires a special syringe dispenser, as the marinade will not pass through a regular syringe. Otherwise, everything is simple. It can be served warm or chilled.

Prepare all necessary ingredients.

Wash the breast, pat dry, and pack tightly into a tubular sausage bandage. Tie the ends on both sides.

Remove the zest from the orange. Squeeze the juice from the flesh. Add 0.5 tsp salt, turmeric, paprika, puree from three garlic cloves, mustard, and olive oil. Mix well.

Fill a syringe injector with the marinade and inject the meat in several places. Insert the needle at a 45-degree angle.

Slice the remaining garlic into thin slices and the zest into fine strips. Rub the meat with the remaining salt on all sides. Sprinkle with the garlic and zest.

Place the meat in a jar, seal it, and refrigerate for 24 hours in a horizontal position. Turn the jar every 4 hours so the marinade distributes more evenly.

Transfer to an oven bag, tie the ends, and make several punctures. Place the bag with the meat in a baking dish and pour in a little water.

Bake in the oven at 180°C for 1 hour. Turn off the oven and leave for 30 minutes. Let cool completely, remove the bag, and pat the meat dry with paper towels.
