
Moscow doughnuts
Description
For these doughnuts, you can make a beautiful, colorful glaze. The simplest recipe includes egg white, powdered sugar, and lemon juice. This glaze hardens quickly and doesn't crumble. It can also be colored using juices of vibrant vegetables or greens, such as carrot, beet, or spinach. Serve warm or chilled. Perfect with tea.

First, mash the cottage cheese thoroughly so that no lumps remain. It's most convenient to do this using a blender. Then add the eggs and sugar to the cottage cheese and blend everything again until well combined.

Add flour, which should be sifted, to the cottage cheese. Add the flour to the dough in portions. With the first portion, add baking soda extinguished with vinegar. Knead the dough by hand. It should turn out quite firm.

Roll the dough into a thick sausage and cut it into slices about two centimeters thick. Sprinkle the work surface with flour, place the slices on it, slightly flattening them. Then, using a plastic bottle cap, cut out circles in the dough.

It's better to fry donuts in a deep frying pan or even in a pot with a large amount of vegetable oil. The oil should cover at least half of the donut, and preferably the entire donut. Fry each side for about 2 minutes.

Place the finished doughnuts on a plate lined with a napkin or paper towel, layered in several layers. This will allow excess oil to drain off the doughnuts. Once the doughnuts have cooled slightly, you can dust them with powdered sugar.
