
Baked sea bass

Step 1

Prepare all the necessary ingredients. Wash the vegetables thoroughly under running water. Peel the potatoes, onion, and carrots. Chop the herbs. Defrost the perch at room temperature. Cut off the head and, holding the fish by the tail, remove the scales. Remove the innards of the perch. Rinse the fish cavity well and scrape off the black membrane with a knife (!).

Rub the sea bass with a mixture of salt, pepper, and spices. Let the fish sit for 30 minutes. Meanwhile, prepare the vegetables. Slice the onion into half-rings, sprinkle with salt, and pour vinegar over it. Then sauté the marinated onion in olive oil in a skillet, covered, over low heat for about 10 minutes. Set aside. Pre-bake the potatoes, carrots, and bell pepper in advance, as the sea bass cooks very quickly. Slice the tomatoes into thin wedges.

Grease the baking dish with olive oil, place the vegetables and sea bass in it, and sprinkle with spices.

Arrange tomato slices evenly around the sea bass (as shown in the photo). Then carefully and evenly, without missing a single centimeter, drizzle the dish with olive oil. Pour 100 ml of water into the baking dish. Place the dish in a preheated oven at 220 degrees Celsius for 45 minutes.

The dish takes 45 minutes to 1 hour to prepare. During this time, the fish will develop a delicious crust, and a pleasant fishy aroma will spread throughout the apartment. Serve the finished dish directly to the table (you can even serve it in the baking dish), garnished with herbs and olives.
