
Sea bass with vegetable ragout
Description
Since white fish pairs well with various vegetables, there are no restrictions—use whatever you have at home. The fish should be cleaned and filleted, or if you don't want to bother, just buy ready-made fillets. Cooking time depends on the vegetables you choose. Serve the stew hot, with slices of white bread.

1. Peel the vegetables, dice the carrot and onion, and slice the garlic thinly. Heat vegetable oil in a saucepan and add the vegetables. Sauté for 3-5 minutes until softened.

2. Turn the heat to high, pour in the wine, scrape the bottom and sides of the pan, and cook for about 5–10 minutes until the liquid has evaporated. Peel the tomatoes, cut them into pieces, add to the pot, then add red pepper flakes, salt, and water. Bring to a boil and simmer over medium heat for 18–20 minutes.

3. Cut the fish into large pieces, season with salt and pepper on both sides, and place in the pot with the vegetables. Cover with a lid and cook for another 5-7 minutes.

4. Serve the finished dish with pieces of white bread immediately after cooking, garnished with finely chopped parsley.
