Grilled sea bass

Description

Preparing sea bass on the grill doesn't take much time or effort. For this recipe, I use Black Sea smarida. This fish is commonly found in markets throughout the Crimean region, as well as along the Bulgarian coast. Smarida, also known as sea bass (blue perch or spotted perch), is a small fish easily recognized by small round dark spots on the sides of its body or blue stripes running along it. Grilled sea bass according to this recipe is very simple to prepare. In fact, you could use river perch as well, but smarida or other sea bass has more tender flesh and a more delicate flavor.     Take our fish.

    Clean the fish from scales, cut off the head and fins, remove the innards. Thoroughly rinse the fish under running water. Pat dry.

    Place the perch into a deep bowl. Generously salt (with sea salt), pepper, and rub thoroughly with various spices.

    Pour the fish with dry white wine, also squeeze half a lemon over it and place in the refrigerator.

    After the fish has marinated, take it out of the refrigerator. Pour off the marinade, dry the fish with a paper towel, and lightly coat it with olive oil.

    Then grill the fish over medium heat. You can use any type of grill—electric or charcoal. It's important that the grill grate is dry, and the fish should be placed in a single layer without touching each other. To achieve an attractive result, the fish should not be moved during cooking, so that appetizing grill marks remain on the fish.
