
Sea Scallops in Sesame

Thoroughly rinse the scallops under cold water and place them on paper towels; let them dry.

Sprinkle the dried scallops with salt and pepper on all sides and leave for 10 minutes.

In the meantime, let's prepare the orange dressing. Mix the juice of 3/4 orange, minced garlic, sugar, mustard, salt, pepper, and olive oil. You can add a little ground hot pepper.

Heat a skillet with olive oil over slightly above medium heat and add the scallops. Depending on their size, sear them for 1–2 minutes per side.

If you don't have toasted sesame seeds, you can coat each scallop in them before frying.
