
Cloudberry in syrup
Description
This recipe won't take much time. 1. First, place the berries into cold water and leave them for 5–7 minutes. Then drain the water and thoroughly dry the cloudberries, leaving them in a colander. 2. There are no exact ingredient proportions for making cloudberries in syrup, as you should adjust them according to your personal taste. The sugar syrup can be made highly concentrated or slightly sweet. Pour water into a saucepan and place it over heat. 3. Once the water boils, add sugar and stir constantly until it dissolves completely. 4. Simmer the sugar syrup for about 5 minutes, then add the berries. The amount of water also depends on the desired consistency of the final product—more liquid or thicker. 5. Cook the berries in syrup for about 15–25 minutes. To help them retain their shape, 15 minutes is sufficient; however, if you want the cloudberries in syrup to have a jam-like texture, cook for 20–35 minutes. 6. Prepare jars in advance by washing and sterilizing them. 7. Fill the sterilized jars with the hot berries and syrup, then seal them. Invert the jars and wrap them warmly to cool.
