
Gooseberry ice cream
Description
This recipe won't take much time. 1. Take currants. Wash them, remove stems, place in a saucepan, add 4 cups of water, and set over medium heat. Stir and bring to a boil. Cook the currants until the berries start breaking apart and releasing their juice. 2. Remove from heat, let cool, then blend using a blender or food processor. Strain to remove the skins. 3. Place egg yolks in a bowl, add sugar and vanilla. Beat with a mixer or whisk. Heat milk and cream together in a microwave. Do not boil! Pour the hot mixture into the egg mixture. Mix until smooth. 4. Pour the cream into a saucepan and place over low heat. Cook, stirring constantly with a wooden spoon, until thickened. Remove from heat and let cool. 5. Mix the resulting custard with the currant purée. Pour into containers and freeze. Good luck! Serve chilled.
