2. Pour the milk into a saucepan and bring to a boil. Remove from heat, let cool slightly, then slowly pour in a thin stream while continuing to whisk.

3. Prepare a double boiler. Place a small bowl over it and, stirring occasionally, reduce slightly. The mixture should thicken but remain smooth and free of lumps.
