Description

Pour milk into a small saucepan and place over heat. 2. Add butter right away so it melts evenly. 3. Meanwhile, prepare the egg yolks. Carefully separate them from the whites. 4. Add sugar to the yolks and whisk until smooth. 5. Then add starch, continuing to beat. 6. Slowly pour the yolks into the boiling milk, and over low heat, constantly stirring, bring to a boil again. 7. Now remove the mixture from heat and cool it down quickly. To do this, use a large bowl filled with water and ice. 8. If there are lumps in the mixture, strain it through a sieve beforehand. This will make the homemade milk and sugar ice cream perfectly smooth and airy. 9. After cooling, transfer the mixture into a container and place the ice cream in the freezer. 10. To ensure the homemade ice cream freezes evenly and remains free of ice crystals, beat it every half hour. After 3–4 rounds of beating, leave it to freeze for another hour, then it's ready to taste. That's the whole secret. Serve chilled.
