
Carrot Cake with Cream Cheese Frosting
Description
For a brighter aroma, you can add a little orange zest to the sponge. And the filling can be enhanced with oranges or canned pineapples. This is an excellent cake for any celebration. It can be served with tea or coffee.

To make a carrot sponge cake, prepare the necessary ingredients. Peel and wash the carrots. Sift the flour through a sieve.

Whisk the eggs with sugar into a fluffy mixture.

Add vegetable oil, cinnamon, and flour to the beaten eggs. Mix everything with a whisk.

Then add to the dough the carrot, grated on a medium grater, and chopped nuts. Mix everything evenly into the dough.

Pour the finished dough into a baking pan with a diameter of 18–20 cm. Place it in a preheated oven at 180 °C for 45–60 minutes.

Let the baked sponge cake cool and cut it into 3–4 layers.

For the cream, prepare powdered sugar, chilled cream, and room‑temperature cream cheese.

For the cream, whisk the cream with powdered sugar into a fluffy cream, then fold in the cream cheese.

Soak the carrot layers and spread them with cream cheese frosting.
