
Carrot cake with caramel
Description
Delicious baked goods for the whole family. This cake is easiest to assemble in a ring mould, so it will not slip or shift while you put it together. Instead of regular caramel, you can make salted caramel, which can balance the sweetness. Choose berries to your taste, but pick varieties that will not weep. It can be served with tea or coffee.

Prepare all the ingredients you need to make a carrot cake with caramel. Wash the berries and pat them dry.

Sift the flour into a bowl, add the spices, baking powder, baking soda, and salt, then mix.

Peel the carrots, rinse them, and grate on the medium holes of a grater.

Crack the eggs into a bowl, add the sugar, and beat with a mixer until light and fluffy. This will take about 6–8 minutes.

Without stopping whisking, pour in the vegetable oil and mix until smooth.

Pour the dry mixture into the bowl. Gently fold with a spatula from top to bottom until the batter is smooth and airy.

Add grated carrot to the dough and mix. The mixture should stay light and airy.

Place a 16–18 cm pastry ring on foil and secure it to form a bottom. Set the ring with the foil on a baking sheet and transfer the dough into it, smoothing the surface evenly.

Bake the sponge cake at 180 degrees for 40–50 minutes, until done.

Let the finished sponge cake stand in the ring for 10 minutes, then remove it and wrap in plastic wrap. Let the sponge cake cool completely, then refrigerate for 8 hours.

Make the caramel. To do this, pour sugar into a heavy-bottomed skillet and heat over high heat for one minute. Pour in hot water and cook until golden. Carefully stirring, pour in hot cream and cook for 2 minutes.

Add the butter and mix until smooth. Lay plastic wrap directly on the caramel and leave to cool completely.

In a bowl, mix the cream, confectioners’ sugar, and cream cheese. Whip everything until light and fluffy.

Cut the carrot sponge cake into three layers.

Spread part of the cream over the first cake layer and smooth it out. Using a piping bag, pipe a border and spread half of the caramel; place some of the berries on the caramel. Place the second cake layer on top and repeat spreading the cream and caramel. Place the final cake layer on top.

Cover the top and sides of the cake with frosting, smooth it, decorate it, and chill in the refrigerator for 1–2 hours, then serve.
