First, you need to prepare the pears. Wash them, peel them and remove the seeds, and cut them into small cubes.

Sprinkle the pear with sugar. Heat in a saucepan until the sugar fully dissolves and the pear becomes slightly softer. If the pear is not juicy, you can add a couple of tablespoons of water or white wine. When the sugar is completely dissolved, simmer the pear in the resulting syrup for 1–2 minutes. Then transfer to a sieve to drain off excess liquid.

Peel the carrots and grate them on a fine grater. If they are very juicy, squeeze out the excess liquid. Then grate the orange zest.

Mix the flour with salt and cinnamon.

In another bowl, whisk the milk, brown sugar, and vegetable oil with a mixer until smooth. When the sugar is completely dissolved, add the vinegar. Whisk again.

Add the flour, mix until smooth. Dissolve the baking soda in water. Pour the resulting solution into the bowl and whisk with a mixer on low speed.
