
Carrot pie with meringue

1. Peel the fresh carrots and grate finely. Add vegetable oil. Separate the yolks from the whites and add the yolks to the carrots. Set aside one white for decoration.

2. Add sugar, vanilla sugar, salt, and baking powder to the carrots. Mix with a mixer until smooth. In 2-3 additions, add the sifted flour and mix gently with the mixer (do not overmix, just mix until combined).

3. Beat two egg whites with a teaspoon of sugar using a mixer until stiff peaks form. Add the egg whites to the batter and gently mix with a spatula. Grease a baking pan with butter and sprinkle with semolina.

4. Spread the dough evenly and bake in a preheated oven at 180 degrees for 30-35 minutes. Prepare the meringue: beat the egg white with sugar and salt until stiff peaks form.

5. Decorate the hot pie using a pastry bag. Put the pie back in the oven to brown.
