
Honey Carrot Cake
Description
The recipe won't take much time. Serve this incredibly fragrant cake for dessert with lemonade or warm milk — for children. For adults, you can soak it with cognac or liqueur, sprinkle with ground cinnamon or powdered sugar — it's up to you! The baked good doesn't go stale and stays soft and moist for 3-4 days. You can also serve it with tea or coffee.

Prepare the listed ingredients. You can use any type of honey. Peel the carrots and rinse them in water.

Beat the chicken eggs into a deep bowl, add the sugar and salt. Whisk for about 2–3 minutes until the mixture turns pale.

Grate the carrots on a fine grater. Add to the egg mixture and mix.

Melt the butter and pour it into the mixture together with the honey. Mix thoroughly.

Add the baking powder and wheat flour in portions. Fold them into the mixture, but do not beat.

Line the pan with parchment paper and spray it with vegetable oil. Place the prepared dough in the pan. Preheat the oven to 200°C and place the pan on the middle rack.

Bake the cake for 30 minutes, then reduce the heat to 160 degrees. Bake the carrot cake for another 15–20 minutes until done. Test the center with a wooden skewer—it should come out dry. Remove the pan, turn it on its side, and let the cake cool slightly.
