
Carrot Croquettes

Wash, peel, and grate the carrot on a fine grater.

If you don't have pea flour, make it from peas using a coffee grinder. Then, in a deep bowl, mix the flour with all the spices and baking soda. Stir everything with a spoon.

Add ground walnuts and coconut flakes to the grated carrots.

Then add pea flour with spices and chopped herbs to the carrots.

The mixture should resemble dough. If the mixture crumbles, add a little warm water and flour.

Form balls, coat them in flour, and fry in oil until golden brown.
