
Carrot dough
Description
The dough turns out very pliable and pleasant to work with. If you don’t say anything, nobody will guess there’s carrot in the dough. With it you can bake both sweet and savory hand pies and full-size pies—vatrushki with any filling, or plushki.

Prepare all the necessary ingredients for making carrot dough. Peel and wash the carrots.

Grate the carrots on a medium grater.

Pour water and milk into a saucepan and add grated carrot. Put everything over medium heat and bring to a boil. Turn the heat down and cook for 15 minutes.

Cool the mixture until it is warm, then blend with an immersion blender until smooth.

Put the sugar and salt in a deep bowl and crumble in the fresh yeast.

Pour the carrot mixture into the bowl and mix well until the crystals dissolve and the yeast disperses. Crack an egg into the bowl and stir.

Pour vegetable oil into the mixture and mix.

Sift the flour into a bowl and knead a soft, non-sticky dough. Knead the dough for at least 10 minutes, until smooth.

Grease a deep bowl with vegetable oil, place the dough in it, and cover. Put the bowl in a warm place for 45–60 minutes to rise. After this time the dough will have risen well, and you can move on to shaping what you are baking.

Divide the dough into pieces, shape the baked goods, and bake like ordinary yeast dough.
