
Carrot-apple muffins
Description
This dough is also suitable for baking pies. The finished cupcakes can be decorated with cream cheese icing, as well as chocolate or whipped cream. The cupcakes will be delicious even without icing. If you don't mention that they contain carrots and apples, no one will ever guess. Serve warm or chilled. Perfect with tea.

1. In a large bowl, mix flour, granulated sugar, baking soda, baking powder, ground cinnamon, nutmeg, and salt. Wash, peel, and grate the carrots and apples on a coarse grater. Chop the walnuts slightly.

2. Add vegetable oil, eggs, grated carrots and apples, coconut flakes, and walnuts to a bowl. Mix thoroughly.

3. Prepare a muffin baking pan by placing paper liners into the cups and lightly greasing them with oil. Divide the batter into the cups, filling each one three-quarters full.

4. Preheat the oven to 175 degrees, place the pan in the oven and bake for 20-25 minutes, checking doneness with a toothpick. Remove the baked cupcakes from the oven and let them cool.

5. Prepare the frosting by beating room-temperature cream cheese, butter, and vanilla until fluffy. Gradually add powdered sugar and mix until fully combined. Transfer the frosting into a piping bag fitted with a medium tip and pipe onto the cooled cupcakes.
