
Carrot-cottage cheese casserole
Description
The recipe won't take much time. Once this casserole is ready, you can let it cool down and then refrigerate for a few hours. I don't know why, but it seems to me that it tastes much better this way. Anyway, I recommend giving it a try. Serve cooled or slightly warm.

First, let's prepare the carrots. We must wash them thoroughly and peel off the skin.

Grate the vegetable on a fine grater.

We break the eggs (2 pieces) into a deep container. Add semolina (2 tbsp) and beat everything together with a mixer. Then add grated carrots to this mixture.

You can also add soaked raisins (two-thirds of the total amount) to the carrot mixture.

In a separate container, place the cottage cheese. Add the chicken egg yolk, as well as the remaining semolina and raisins.

Mix the curd mixture using a mixer.

Take a baking dish. Line it with parchment paper. Place the cottage cheese mixture in first.

Next, add the carrot mixture. Bake in a preheated oven at 180 degrees for about 40-50 minutes (check for doneness; it may take up to an hour).
