Carrot buckwheat cake

Description

Thanks to the carrots, the cake will turn out a sunny color. In the finished cake, neither the carrots nor the vegetable oil are noticeable at all. You can use any dried fruit—they can be soaked not only in orange juice but also in cognac or rum. You can swap the spices for your favorites; a ready-made gingerbread spice blend works great. Sprinkle the finished cake with powdered sugar or decorate it with icing.

    Gather all the ingredients you need for a carrot-and-buckwheat cake. Peel and rinse the carrot. Wash the orange thoroughly in hot water and pat dry. Preheat the oven to 180°C.

    Grate the zest from half an orange and squeeze the juice. Wash the dried fruit, drain it in a colander and let all the water run off completely. Chop the apricots into pieces and put them in a bowl together with the raisins. Pour orange juice over them, cover and leave for 8 hours in a cool place.

    In a bowl, combine wheat and buckwheat flour, add baking powder and spices, and mix.

    In a deep bowl, crack the eggs, add the sugar and beat with a mixer until light and fluffy.

    Pour vegetable oil into the egg mixture and stir gently.

    Mix warm kefir with baking soda until smooth. The mixture will start to foam; that’s normal. Pour the kefir into the eggs and mix until smooth.

    Grate the carrot on the fine side of a grater, add it together with the zest to the egg mixture, and gently fold to combine.

    Sift the flour mixture into the bowl with the eggs and carrot and stir gently until smooth. It should be like thick sour cream.

    Add the soaked dried fruit along with its soaking liquid to the dough and mix.

    Grease the pan with vegetable oil and line it with parchment. Transfer the dough into the pan and spread it evenly.

    Place the pan with the batter in a hot oven and bake for 40–45 minutes, until done. Remove the finished cake with the parchment, cool on a wire rack, and leave until completely cool.
