
Carrot-pineapple cake with icing

1. Preheat the oven to 175 degrees and lightly grease a pie pan with oil. Grate the carrots and cut the pineapple into cubes. Chop the walnuts. In a medium bowl, mix together the flour, baking powder, baking soda, cinnamon, and 1/4 teaspoon of salt.

2. In a large bowl, mix brown sugar, 1/4 cup sour cream, vegetable oil, eggs, and vanilla extract until smooth.
