
Carrot casserole with prunes
Description
Delicious baked treat for the whole family. Try making carrot casserole with prunes—I’m sure no one will remain indifferent. The dish looks even more like a delicate sponge cake than a casserole. This dessert will appeal to both children and adults. If desired, prunes can be replaced with raisins or nuts. It can be served with tea or coffee.

Prepare all the ingredients.

Combine the eggs, sugar, cinnamon, vanillin, baking powder, and semolina. Whisk everything until smooth.

Rinse the prunes and cut them into 3–4 pieces.

Grate the carrots on a fine grater and stew them with added oil until soft. Then transfer them to a deep bowl and let them cool slightly.

Add the egg mixture and chopped prunes.

Mix everything well.

Pour the mixture into a greased baking dish. You can sprinkle the bottom and sides of the dish with semolina beforehand. Bake in the oven at 180 degrees for about 30 minutes.
