
Carrot Cake
Description
The recipe won't take much time. Carrot cake resembles a large gingerbread, but with filling. For a more intense color, you can add cocoa powder or replace honey with molasses. There are countless ways to prepare this cake. Adding carrots gives the cake not only color, but also flavor and texture. Experiment with the recipe, following the basic ingredient proportions, and you'll achieve a new, unique taste. Serve with tea or coffee.

Prepare the ingredients listed in the recipe; if any spice is missing, it's not critical.

Place the butter in a saucepan, add sugar, honey, and all the spices (cinnamon, ginger, nutmeg, cardamom). Set over medium heat, melt while stirring, bring to a boil, but do not boil.

Mix all ingredients until combined and the sugar is dissolved.

Pour the aromatic mixture into a mixing bowl.

Grate the carrot on a fine grater and add it to the mixing bowl.

In a separate bowl, beat two eggs and pour them into the bowl with the main ingredients.

Mix the flour, salt, and baking powder. Add the flour mixture to the mixing bowl and knead the dough by hand.

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

While the dough is in the refrigerator, roughly chop the nuts and lightly toast them in a dry skillet.

Divide the dough into 2 parts. Roll out the dough into a sheet. It's best to roll it out directly on parchment paper.

Spread the jam on the dough, leaving about 2 centimeters from the edges, and sprinkle nuts on top. I used apricot jam.

Roll out the second piece of dough and transfer it with a rolling pin onto the first layer.

Using a fork, crimp the edges of the dough, make several pricks on top, place in a preheated oven at 180°C in "top-bottom" heating mode, and bake for about 25 minutes.

Towards the end of baking, prepare a strong syrup from 30 g of water and 60 g of sugar. Bring the water and sugar mixture to a boil and cook for about 3-5 minutes until slightly thickened.

Place the finished cake on a rack and, while still hot, glaze it with sugar icing in several applications.
