
Homemade Korean-Style Carrots
Description
A tasty appetizer for any gathering. If you make Korean-style carrots, you can adjust their spiciness and rich flavor. Store the carrots in the refrigerator in a container with a tightly sealed lid, otherwise their aroma will spread throughout the entire refrigerator. I specifically use olive oil—it tastes much better with it. It is very easy to make.

Heat a skillet and add the coriander seeds. Toast them for 1–2 minutes, then transfer to a blender and grind.

Peel and wash the carrots, cut them into thin matchsticks, or grate them on a special grater.

Transfer the carrots to a large bowl, add salt and mix, set aside.

In another bowl, mix the red flakes with the vinegar and set aside.

Heat a skillet with olive oil, peel and slice the onion into half-moons, sauté it in the skillet, remove from the heat, and add the pepper and vinegar mixture.

Add all the spices and vegetables to the carrots (peeled garlic and sautéed onion), and mix. Pack the carrots into jars and let steep for 1–2 hours.
