
Marinated Carrots
Description
A delicious addition to everyday and festive dishes. The classic recipe for marinated carrots is often referred to as "Korean-style." Let's take a slightly different look at this dish and prepare a spicy appetizer or side dish in your kitchen. 1. Wash, dry, and peel the carrots. Cut them into uniform rounds. 2. Bring water to a boil in a deep saucepan and add the carrots. Simmer for about 5–6 minutes. Alternatively, you can do the same in a microwave-safe deep dish at high power. 3. Peel the onion and cut into large cubes. 4. Remove seeds from the pepper and chop it. 5. In a separate saucepan, mix vinegar, vegetable oil, mustard, salt, and pepper. 6. Place the marinade over heat, add bay leaf, and bring to a boil. 7. Remove the carrots from heat, drain off excess liquid, then add the onion and pepper. 8. Pour the hot marinade over the mixture and let it cool. After 1–1.5 hours, transfer to the refrigerator. The marinated carrots can be tasted after 5–8 hours, but it's best to leave them overnight in the fridge. They can be stored for up to two weeks without losing flavor, although they usually get eaten much sooner. Perfect served with pasta, meat, or vegetables.
