
Mordovian pies
Description
The recipe won’t take much time. When choosing cottage cheese for the filling, give preference to a dry one. The filling should be dense, without any released liquid. Serve cooled or slightly warm.

Prepare the necessary ingredients.

For the filling, put the potatoes on to boil.

For the dough, dissolve the yeast and sugar in warm water. Leave for 15 minutes.

In a separate bowl, combine the yeast mixture, vegetable oil, egg, and salt.

Add most of the flour and begin kneading. Add the flour in portions and knead until the dough no longer sticks to your hands.

The finished dough should be soft and pliable, not sticking to your hands. Shape it into a ball and transfer it to a bowl. Cover the bowl with plastic wrap and place it in a warm spot for 1 hour. Then punch it down and leave it for another 40 minutes.

While the dough is proofing, make the filling. Drain the cooked boiled potatoes and leave them in the pot for about 10 minutes so they dry out a bit. Add the butter. Mash into a puree. If needed, add salt.

Add the cottage cheese and mash well once again.

After the specified time, the dough will noticeably increase in size. Punch it down. It is ready for shaping.

Divide the dough into 9 equal parts. Shape into rounds and place on a baking sheet lined with parchment paper. Cover with a towel and leave to rise for 10 minutes.

After the time has elapsed, make indentations in the dough pieces, in the style of vatrushki, but with a larger diameter. Distribute the filling and smooth it with a spoon. Cover with a towel and leave for 10 minutes.

After the specified time, pinch the edges of the pies on all four sides. Brush with egg and place in an oven preheated to 180 degrees for 25–30 minutes. Take into account the specifics of your oven!

Remove the finished pies from the oven. Cover with a towel for 15 minutes. After that, you can remove them from the baking sheet.
