
Scalded milk
Description
This recipe for baked milk is very old. It has come to us from ancient times. This dish used to be prepared in clay pots or jugs. An incredibly tasty and healthy dish that can be served.

1. First, heat the milk on the stove (preferably using good homemade milk), add cream, and mix thoroughly. We will need enameled cast-iron pots or heat-resistant clay pots. Pour the slightly cooled milk into the pots (we use clay pots) and place them into a preheated oven (the oven temperature should be low, about 80–100°C). You can also place the pots in a wood-burning oven. Simmer the milk until a brown film forms on the surface (this takes approximately one to one and a half hours). To make the film thick and tasty, press it down to the bottom of the pot with a spoon. Repeat this procedure about three times during the simmering process.

2. Then remove the pots with milk from the oven, cover them with lids, and keep at a temperature of seventy to ninety degrees for about four to six hours (to maintain this temperature, the milk can be transferred to a thermos).

3. The baked milk is ready. You can cook millet, rice, or semolina porridge using this homemade baked milk. Alternatively, you can simply drink the milk with a bun.
