Milk kvass

Description

Nutritious and healthy milk kvass is perfect for quenching thirst during summer heat, especially if you chill it in the refrigerator before serving. The drink takes one day to prepare, but if you prefer a more sour taste, leave it for another day—it will lose a quarter of its sweetness. Then it's ready to serve.

    Prepare the listed ingredients. Choose milk of any fat content and type, but make sure it's high quality, not powdered!

    To activate the yeast, warm the milk slightly to a temperature of 30 degrees, but no higher. To do this, pour granulated sugar into a saucepan. You can optionally add a little vanilla sugar as well.

    Pour in the milk of your chosen type and fat content, and add the dry yeast. Warm the milk on the stove for 2 to 3 minutes over moderate heat. Turn off the heat and drop a small amount of milk onto the back of your hand—it should not feel hot or burn your skin! Gently mix the yeast into the liquid, dissolving it together with the sugar.

    Cool the contents of the container to room temperature, then transfer to bottles. Place the bottles in the refrigerator for 24 hours. After the specified time, taste the drink. If it is sweet and not very fizzy, leave it for another 24 hours.

    Then pour the chilled drink into glasses or cups and serve. It is very tasty to serve kvass with black or rye bread, sweet pastries.
