Place the yolks in a separate bowl, add 40 grams of sugar and starch.

Then, slowly pour the mixture from the bowl into the saucepan with the hot milk in a thin stream, whisking constantly and vigorously to prevent the egg yolks from curdling. Cook the mixture over low heat, stirring constantly with a whisk, until it comes to a boil and thickens slightly but noticeably. As soon as the mixture reaches a consistency similar to condensed milk, remove the saucepan from the heat. Let the mixture cool down to room temperature.

Place the frozen strawberries in a saucepan and add 40 grams of sugar. Set over low heat and bring the syrup to a boil—make sure all the sugar has dissolved.
