2. Grate the hard cheese on a coarse grater, then place it in a container with high sides. For this sauce, use cream with no more than 35% fat content.

3. Mix the ingredients thoroughly and add salt, pepper, and spices to taste. Heat the sauce over a water bath until the cheese melts. Then remove from heat and add pressed garlic (pressed, not minced, as mincing will release its juice).
