Description
Tasty baked goods for the whole family. The “wet” chocolate cake is made very simply, yet the result will exceed all your expectations. A moderately moist crumb pairs well with a sour‑cream cream. Add sugar to the batter and powdered sugar to the sour cream to taste. I’m not a fan of cloyingly sweet cakes, so I indicated the amounts as I see fit. If you can’t get full‑fat sour cream, buy one with 15‑20% fat and place it in a sieve lined with cheesecloth. Put the sieve in a bowl. Chill everything for 7‑8 hours or overnight. In the morning you’ll have a luxurious, thick sour cream. To obtain 450‑500 ml of thick sour cream you’ll need 700 ml of store‑bought sour cream with 15‑20% fat. It can be served with tea or coffee.

Prepare the ingredients for making the cake.

Break the eggs into a bowl and add the sugar.

Whisk the eggs with sugar thoroughly using a whisk or a mixer.

Pour in refined vegetable oil.

Add the water. It should be cold or at room temperature.

Add the baking soda neutralized with vinegar or lemon juice. Gradually add the flour and whisk, so that there are no lumps.

Sift the cocoa and add it to the batter.

Mix the dough well again.

Bake the cake in the oven at 170‑175 °C for 35‑40 minutes. Preheat the oven in advance. Baking time depends on your oven. Check doneness with a dry wooden skewer. You can also bake the cake in a multicooker using the “Bake” setting. I did exactly that.

Prepare the cream for the cake. Place the full‑fat sour cream in a bowl, add powdered sugar and vanilla sugar. Beat with a mixer or a blender whisk until fluffy, stable and homogeneous consistency.

Remove the cake from the pan, let it cool, and cut it lengthwise into two pieces. Layer the cake with cream, and spread the sides of the cake.

Decorate the cake to taste. I drizzled the top of the cake with melted chocolate. I sprinkled the sides with crushed biscuits.

"Moist" chocolate cake can be eaten right away, without waiting for it to soak in. But after a few hours it will become even tastier.
