Beat the egg whites with sugar and citric acid. Place the saucepan with the egg whites over a double boiler on the lowest heat. Whip the mixture using a hand mixer for about 15 minutes. Then remove the saucepan from the heat and continue whipping for a few more minutes.

If you want to change the color of the wet meringue, simply dissolve dry food coloring (4-5 g) in vodka (1 tsp). Add the resulting mixture to the cream and mix thoroughly.
