
Capelin in the Smokehouse
Description
The recipe won't take much time. A simple, inexpensive, and very tasty appetizer that's easy to prepare in your own smoker. Rinse the capelin in water, place it in a marinade of spices, salt, and sugar, and refrigerate for 2 days. Then pat it dry with a towel and arrange it on the smoker rack. Smoke for half an hour over a mix of apricot and oak wood chips with a pinch of black tea added. You'll end up with golden, glossy fish — smoked capelin.

Thaw and rinse the store-bought fish.
