
Smoked capelin

A tasty appetizer for any gathering. This recipe is for lovers of fish dishes. Smoked capelin — sounds delightful, doesn't it? Let's prepare this tasty little fish ourselves — at home and without special equipment. It can be served warm or chilled.

Take an old small saucepan. Line the bottom with foil so that it forms sides. Add rice (plain ordinary rice), then sugar, and tea on top (without flavorings).

Cover everything with foil and fold up the edges from the first layer so the ingredients are well sealed inside the foil. Pierce holes with a toothpick or skewer.

Place the capelin on top of the foil. Before putting the fish on the foil, season it with salt, pepper, spices, and a little sugar to taste. Cover with a lid (tightly) and wrap with a damp towel (a homemade airtight seal). Then put it on the stove over high heat; after a minute, reduce the heat to medium. Smoke the capelin over medium heat for about 20 minutes. A strong fish smell will spread through the apartment, so don’t forget to turn on the exhaust fan.
