
Mizithropitakia
Description
Homemade pastries for tea. Mizithropitakia – sweet cheese pastries served with honey, a signature dish from the Greek island of Crete. Serve warm or chilled. Perfect with tea.

1. Prepare the filling. In a bowl, mix the cheese, egg, cinnamon, and sugar. Mash with a spoon. Mix all ingredients well.

2. Sprinkle the work surface with flour. Place the filling onto the rolled phyllo dough using a tablespoon, starting from the center and moving toward one edge. Spread the filling over only half of the dough; the other half will be used to cover the filling.

3. Cover the filling with the second half of the dough, without pressing down.

4. Starting from the edge, place the cutter over the cheese filling and press down. For cheese buns, you can use a pita cutter or any other cutter, as long as it has serrated edges to seal the two layers of dough together.

5. Heat oil in a skillet and fry the dumplings on both sides. Drizzle with honey before serving. Tip: Cheese dumplings can be frozen before frying. Place them on a tray in a single layer and put into the freezer. Once frozen, transfer them into plastic bags. They can be stored this way for two to three months. To prepare, remove them from the freezer and let thaw for 10 minutes, then fry.
