Instructions
- 1
Step 1

Wash the pollock fillet and dry it. If you have a whole fish, cut it along the backbone into two parts. Remove the backbone and bones.
- 2
Step 2

Place the fish in a baking bag or oven-safe pouch. Season with salt and sprinkle with dried rosemary. Add an orange slice on top of each layer of pollock.
- 3
Step 3

Bake the hake in the oven at 180 degrees for 25-30 minutes.
- 4
Step 4

While the fish is baking, prepare the sauce. Place butter in a skillet and melt it.
- 5
Step 5

Squeeze the juice from one orange and add it to the pan.
- 6
Step 6

Also add one egg yolk and one ice cube. We add the ice cube to prevent the egg from cooking in the hot oil.
- 7
Step 7

Add half a teaspoon of flour and thoroughly mix all the ingredients to avoid lumps. Then, over low heat, constantly stirring, bring the sauce to a thick consistency and season with salt to taste.
- 8
Step 8

Finely chop the dill and add it to the orange sauce.
- 9
Step 9

Remove the fish from the pouch, place it on a plate, and pour the orange sauce over it.
