
Mini Stollen
Description
Homemade baked goods for tea. If you want to vary the flavour of mini stollens, replace dried apricots with candied peel or prunes. You can also choose the nuts as you like. The cookies keep very well and stay fresh for a long time.

Prepare the necessary ingredients.

Pour boiling water over the dried apricots; after 10 minutes drain the water and cut them into strips.

Grind the nuts in a blender until coarsely ground.

In a bowl, mix the egg with sugar.

Add the orange zest and 1 tbsp freshly squeezed orange juice. Stir.

Add soft butter and cottage cheese. Mix well.

Add raisins, crushed nuts, chopped dried apricots, and cardamom. Mix.

Add the flour and baking powder.

Mix a thick, airy dough. It stirs together easily with a spoon.

Line the baking sheet with parchment paper. Using a tablespoon, spoon the dough onto the sheet. Bake in an oven preheated to 180 degrees for 15 minutes.

Remove the finished cookies from the oven and dust them with confectioners’ sugar immediately. Cool before serving.
