
Mini pies with salmon
Description
The pastries are simple and quick to make. These kinds of pastries vanish from the buffet table first. Today I made fish pies, so I shaped them like little fish. Shaping them is not difficult at all. Shape ordinary pastries and place them seam side down. Then pull one edge slightly and cut it in half. Cross the strips—that’s the tail. Use scissors to make fin cuts. Score a strip with a knife to separate the head. The bake is ready. Serve at the table.

Prepare all the ingredients needed to make mini salmon pies “I’ll sit on a stump and eat a pie.”

Warm the milk slightly, add salt, sugar, fresh yeast, and mix until smooth.

Crack an egg into a bowl, add vegetable oil, and mix. Sift the flour into the wet mixture in batches and knead a soft, non-sticky dough. Shape the dough into balls, place them in a deep bowl greased with oil, and cover. Leave in a warm place for 40–60 minutes to rise.

While the dough rises, prepare the filling. Cover the salmon with cold water, add salt, black peppercorns, and a bay leaf. Boil the fish until done, then remove and cool.

Peel the yellow onion and chop it finely. Heat vegetable oil in a skillet and add the onion. Sauté the onion for 5–7 minutes, stirring, until softened.

Flake the salmon, removing any remaining bones. Add sautéed onion and peeled apple grated on a fine grater. Season with pepper, pour in soy sauce, and mix.

Transfer the risen dough to a floured work surface, divide it into small portions and roll into balls. Cover them and let rise. About 10–15 minutes.

Roll each ball into a flat round and spread the filling.

Make small pies and arrange them on a baking sheet lined with parchment greased with vegetable oil. Cover the pies and let rise for 10–15 minutes.

Bake the pies in a hot oven at 180 degrees until cooked through and golden brown. Brush the finished pies with vegetable oil, cover, and let them rest for 10 minutes.
