
Mini pizza on eggplants
Description
The recipe won't take much time. Eggplant mini-pizzas are truly delicious! A tender cheesy topping hiding fragrant mushrooms and pepperoni underneath, all on a crispy eggplant round! In my opinion, these mini-pizzas make a wonderful appetizer, a great alternative to the traditional "mother-in-law's tongue." My recipe is another tasty way to enjoy eggplant dishes. Prepare all the necessary ingredients. You can use store-bought tomato sauce or make it yourself. Or maybe you have homemade tomato sauce canned in jars? Then feel free to use it.

Slice the eggplant into rounds 6-8 mm thick. You can cut them thicker, but I really prefer very thin slices because they bake well and become nicely crispy.

Spread tomato sauce on each eggplant slice. Finely chop the mushrooms and place the pieces on top of the sauce.

Finely chop the pepperoni and place it on the mini pizzas.

Grate the hard cheese on a fine grater. Generously sprinkle the eggplant slices with cheese, forming neat, high mounds.

Bake the mini eggplant pizzas at 180 degrees for 15-20 minutes. As soon as the eggplants are nicely browned and the cheese has melted and turned golden, remove the dish from the oven. Serve the appetizer hot.
