
Mini cinnamon muffins
Description
Recipe for muffins with cinnamon-sugar topping and milk-vanilla glaze. This recipe yields 2 to 2.5 dozen muffins. These are a perfect light dessert for breakfast.

1. Prepare the topping. Cut the butter into pieces. In a medium bowl, mix flour, sugar, cinnamon, and butter. Combine all ingredients together with a pastry cutter or fork until the mixture resembles sand. Set aside.

2. Make muffins. Preheat the oven to 175 degrees. Grease a muffin tin with butter. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt. Set aside. Melt the butter and cool to room temperature. In a small bowl, combine buttermilk, eggs, butter, maple syrup, and vanilla extract. Make a well in the flour mixture and add the egg mixture, stirring to combine.

3. Place the prepared dough into a piping bag and fill the mold cavities up to 3/4 full.
