
Mini cheesecakes with strawberries

1. Preheat the oven to 190 degrees. Line a muffin tin with paper liners. In a food processor, mix crackers and granulated sugar together.

2. Add salt and butter, mix until the mixture resembles wet sand.

3. Divide the mixture between paper liners in the pan, pressing firmly into the bottom and sides. Bake in the oven until the crusts are golden brown and fragrant, about 10–12 minutes. Let cool in the pan at room temperature.

4. In a medium mixing bowl, beat the cream cheese with a mixer for 3 minutes. Add powdered sugar, strawberry jam, and vanilla extract, and beat until smooth.

5. In another bowl, whip the cream until creamy, about 2-3 minutes.

6. Gently add the whipped cream to the cheese mixture, one-third at a time. Then gently fold in the coarsely chopped strawberries.

7. Spread the mixture over the chilled crusts in the pan and refrigerate for 1 hour or overnight.
