
Almond Rolls
Description
Delicious baked treat for the whole family. Almond rolls are a dessert pastry that hardly anyone will be able to resist. I highly recommend making them—you won't regret it! Of course, it will take some effort, but it's definitely worth it. The baking is done. Serve at the table.

Step 1

Blanch almonds in boiling water for 4 minutes, then drain in a colander, let cool, and remove the skins from the kernels. Grind the almonds into a powder. Separate the yolks from the whites. Rub the yolks together with butter and sugar into a smooth mixture. Beat the whites into a fluffy foam.

Into a bowl with beaten egg yolks, add crushed almonds and flour. Mix well. Add beaten egg whites and gently stir once again.

Preheat the oven to 180°C. Line a baking sheet with parchment paper greased with oil. Place 1½ tablespoons of almond dough each, spaced well apart.

Using a small rolling pin or a water-filled bottle, roll out the dough into thin round flatbreads, lightly dusting them with flour. Trim the edges evenly. Place the baking sheet into the oven. Bake for 4 minutes. Turn off the oven and, removing the flatbreads one at a time, quickly roll them into tubes while still hot. This must be done while the flatbreads are warm, so it's best to work with gloves.

Make the cream. Finely chop the walnuts. Soak the gelatin in a small amount of warm boiled water, then squeeze it out. Beat the cream with powdered sugar until fluffy. Without stopping, add the walnuts and gelatin, then immediately turn off the mixer.

Place the cream into a piping bag and fill the pastries.
