Description

Making crescent-shaped croissants is pure pleasure! This recipe yields a dozen small buns. The croissant filling can be prepared in advance and stored in the refrigerator for up to 5 days. Serve warm or chilled. Perfect with tea.

    1. Prepare the filling. Process almond paste in a food processor 2-3 times, or mash with a fork. Add sugar and mix for another 5-6 times.

    2. Add the butter and mix well. Then add the flour and finely grated zest, and mix. Cover the bowl with a lid and refrigerate until needed.

    3. Preheat the oven to 200 degrees. Line two baking sheets with parchment paper or silicone mats. Thaw the puff pastry. Place one sheet of pastry on the work surface. Cut the pastry sheet into 6 rectangles, then cut each rectangle in half diagonally.

    4. Place about 1 tablespoon of almond filling onto each triangle and spread evenly to the edges. Roll up the triangles into croissants, starting from the wide side. Place them spaced apart on the prepared baking sheets.

    5. If preparing in advance, wrap the croissants in plastic wrap and refrigerate until needed. Brush the croissants with a mixture of beaten egg and milk (or cream). Sprinkle with sliced almonds.
