
Almond granita
Description
If you want the granite to be pure white, peel the almonds. To do this, place the almonds in cold water and leave for several hours until the skins start to come off easily. But personally, we prefer the color of the granite to be like that of boiled milk, thanks to the skins.

Prepare all the necessary ingredients for making almond granita.

Place fresh almonds in the blender bowl and grind as finely as possible.

Pour half of the water over the almond crumbs and blend again with a blender. Let it sit for 30 minutes.

Pour the resulting milk into a saucepan. Pour the remaining water over the squeezed almond pulp, blend again with a blender, and let it sit for another 30 minutes. Squeeze thoroughly once more, then combine both liquids. We won't need the almond pulp anymore.

Bring the almond milk to a boil over medium heat. Add sugar to the saucepan, cook until the sugar dissolves, then remove from heat. Let the liquid cool completely.

Pour the mixture into a container and place it in the freezer. Freeze the granita for several hours, stirring every 40 minutes to form a flaky texture instead of a solid block. Serve the finished granita in dessert glasses immediately.
