Description

The dish is prepared without unnecessary complications. Almonds in sugar glaze are a popular treat in Germany during Christmas. They are quite easy to make at home. Almonds wrapped in a cute little cellophane bag or a paper candy cone will make a wonderful festive souvenir for guests. The finished dessert can be served at the table.

    1. Use a heavy saucepan and a wooden spoon for cooking. Add water, 1 cup of sugar, and cinnamon to the saucepan, and stir to combine. Bring the mixture to a boil over medium heat. Add almonds, increase the heat, and cook, stirring constantly, until the water evaporates. The sugar will begin to dry slightly and start sticking to the almonds. Continue stirring until the almonds start to turn brown. Reduce the heat to medium if the almonds begin browning too quickly. Keep stirring until the almonds are coated with a shiny glaze.

    2. Now add the remaining sugar and mix. Add vanilla extract. If you have vanilla sugar or vanilla flavoring, you can add that as well. At this point, the almonds may crackle, depending on how fresh they are. Continue stirring until the almonds become glossy. They should still have small granules of sugar and cinnamon on them.

    3. Remove the pot from the heat and place the almonds onto a sheet of parchment paper. Spread the almonds as far apart from each other as possible, but don't worry if some of them are initially stuck together. Be careful, as the almonds will be very hot, so use a spoon to handle them.

    4. While the almonds are cooling, try to separate them all from each other with a spoon. Store the almonds in a dry, covered container for several weeks.
