
Chicken Milanese
Description
The recipe won't take much time. Pollo Milanese is tender chicken fillet, fried in breadcrumbs, egg mixture with spices, garlic, and flour. The breading helps preserve the tenderness of the fillet, preventing it from drying out or overcooking. The crust turns out crispy and very tasty! Pollo Milanese is usually served with cherry tomatoes and lemon slices. Serve hot.

Place the eggs, flour, onion (you can cut it in half), a tablespoon of parsley, garlic, and spices into the blender container. Blend for a couple of minutes until a smooth mixture forms.

Place the breadcrumbs into a separate bowl so they're ready for breading. You can pound the chicken breasts if they're thick. Heat a skillet and add vegetable oil. Dip each chicken breast first into the egg mixture, then into the breadcrumbs.

Coat the chicken on both sides and place it in a frying pan to sear until a golden crust forms. Sear for about 7-10 minutes on each side.

Place a piece of mozzarella on the cooked, still hot chicken, allowing the cheese to melt. Serve the finished pollo milanese with a light vegetable salad.
