
Mussels in sauce
Description
A delicious seafood dish—mussels in Blue Dor cheese sauce. You'll need just a small piece of this cheese and a package of mussels: frozen or in shells. Remember to discard any open mussel shells right away—they shouldn't be cooked. Likewise, remove any shells that haven't opened after cooking.

Prepare the listed ingredients.

Peel the onion and rinse it, or substitute with leek if you have it available. Cut into small cubes and sauté in vegetable oil until soft, about 2-3 minutes.

Place the mussels in a frying pan. If they were frozen, thaw them in advance for about 15-20 minutes at room temperature before cooking. You can also add them frozen, but in that case, increase the cooking time by approximately 2-3 minutes. Keep in mind that mussels are sold pre-cooked and frozen, so you'll only need about 4-5 minutes.

Grate the "Blue Dor" cheese on a fine grater and add it to the container. Pour in the cream or hot water.

Bring the contents of the container to a boil and stir thoroughly until the cheese slices dissolve in the liquid. Taste the sauce and season with salt and pepper if needed. Simmer the mussels in the sauce for about 2–3 minutes over moderate heat, taking care not to let the sauce curdle. Finally, rinse the green onions, chop them, and add to the container. Turn off the heat.
