
Mussels with Cheese

First, prepare the sauce for the mussels. Take a piece of butter from the refrigerator and let it sit until it softens. Put the butter in a bowl and add olive oil. Mix both ingredients until smooth.

Wash and dry the lime. Cut it in half and squeeze the juice from each half. If you don't have a lime on hand, a small ordinary lemon will do.

Wash the herbs and pat them dry. Then trim the stems and chop the leaves as finely as possible with a sharp knife.

Add finely chopped herbs and lime juice to the bowl with the butter and vegetable oil. Then add salt, pepper, thyme, and garlic passed through a press to the same bowl. Mix all the ingredients thoroughly until smooth.

Rinse the mussels under running water; split them so only one shell remains with the seafood inside. Place a little of the oil mixture on each shell and spread it evenly. Then arrange all the shells on a baking sheet.

Grate any hard cheese on a grater. Sprinkle each mussel with it. Preheat the oven to one hundred eighty degrees, place a baking sheet with the mussels in it for ten minutes. Serve the finished dish hot, while the cheese is still soft.
