Spanish-Style Mussels

Description

Perfect for the table and with drinks. This aromatic seafood dish can be served as an appetizer alongside a glass of chilled white wine. If desired, you can use red or green onion instead of yellow onion. The dish should be served immediately after preparation. Serve the appetizer to the table.

    Prepare the listed ingredients. Peel the garlic clove and onion, and rinse them in water. Remove the seeds from the bell peppers and rinse them together with the tomatoes.

    Chop a clove of garlic into a sauté pan or saucepan, add a pinch of salt, and add the washed mussels. Pour in hot water and simmer them for about 3–5 minutes with the lid on, stirring a couple of times.

    While the mussels are cooking, dice the tomatoes, seeded chili pepper, and bell pepper into small cubes and transfer the diced vegetables into a salad bowl or deep container.

    Cut the onion the same way and add it to the container together with the salt and ground black pepper.

    Rinse and finely chop the parsley or dill, add to the cut vegetables along with vegetable oil—cold-pressed olive oil is best—and mix gently.

    Drain the mussels in a colander and remove the top shells. Arrange the mussels in their shells on a platter.

    Place the vegetable salsa on the mussels and serve the dish with a glass of white wine.
